We’re looking for a confident and experienced Head Chef to lead our kitchen with authority, structure, and passion. This is a hands-on leadership role for someone who thrives in high-volume service, understands the balance between quality and efficiency, and knows how to drive both performance and team culture.
What you’ll bring and learn
- Proven experience as a Head Chef or Senior Sous Chef in a busy, high-volume kitchen in the Netherlands
- Strong leadership skills with the ability to mentor, coach, and inspire your team
- Hands-on knowledge of Italian or Mediterranean cuisine
- Solid understanding of food cost, labour cost, and kitchen KPIs
- Excellent organisational and communication skills
- Calm, solution-focused approach under pressure
- Passion for quality, presentation, and delivering exceptional guest experiences
- Fluency in English (command of the Dutch language and Italian is a plus)
- Flexibility to work evenings, weekends, and peak service periods
What you’ll be doing
- Take full responsibility for the kitchen operations at Bello Gio’s by the River
- Lead and develop the kitchen team
- Oversee daily prep, service execution, and plating to ensure consistency
- Manage food cost, portion control, inventory, and supplier relationships
- Monitor labour scheduling to align with revenue and service needs
- Ensure high standards of health, safety, and kitchen hygiene
- Support seasonal menu updates and specials execution
- Collaborate with the leadership team to achieve operational and financial targets
Job requirements
- Proven leadership experience in high-volume, Italian or Mediterranean kitchens located in the Netherlands
- Strong operational and commercial awareness, with hands-on cost management
- Ability to work hands-on while leading a team effectively
- Excellent organisational, communication, and problem-solving skills
- Ability to maintain composure in a fast-paced environment
- Commitment to quality, consistency, and team development
