We’re looking for a confident and experienced Head Chef to lead our kitchen with authority, structure, and passion. This is a hands-on leadership role for someone who thrives in high-volume service, understands the balance between quality and efficiency, and knows how to drive both performance and team culture.

What you’ll bring and learn

  • Proven experience as a Head Chef or Senior Sous Chef in a busy, high-volume kitchen in the Netherlands
  • Strong leadership skills with the ability to mentor, coach, and inspire your team
  • Hands-on knowledge of Italian or Mediterranean cuisine
  • Solid understanding of food cost, labour cost, and kitchen KPIs
  • Excellent organisational and communication skills
  • Calm, solution-focused approach under pressure
  • Passion for quality, presentation, and delivering exceptional guest experiences
  • Fluency in English (command of the Dutch language and Italian is a plus)
  • Flexibility to work evenings, weekends, and peak service periods

What you’ll be doing

  • Take full responsibility for the kitchen operations at Bello Gio’s by the River
  • Lead and develop the kitchen team
  • Oversee daily prep, service execution, and plating to ensure consistency
  • Manage food cost, portion control, inventory, and supplier relationships
  • Monitor labour scheduling to align with revenue and service needs
  • Ensure high standards of health, safety, and kitchen hygiene
  • Support seasonal menu updates and specials execution
  • Collaborate with the leadership team to achieve operational and financial targets

Job requirements

  • Proven leadership experience in high-volume, Italian or Mediterranean kitchens located in the Netherlands
  • Strong operational and commercial awareness, with hands-on cost management
  • Ability to work hands-on while leading a team effectively
  • Excellent organisational, communication, and problem-solving skills
  • Ability to maintain composure in a fast-paced environment
  • Commitment to quality, consistency, and team development
